Baby corn is a young ear of corn that's harvested before the corn is fully grown and fertilized: 

• Appearance: Baby corn is bite-sized and has a delicate, sweet flavor. 

Uses: Baby corn can be eaten raw, pickled, or cooked, and is often used in salads, stir-fries, soups, chowders, stews, curries, chili, and noodles. 

Nutrition: Baby corn is comparable in nutritional value to other vegetables like cauliflower, cabbage, tomato, eggplant, and cucumber. 

Availability: Baby corn can be found in the canned or frozen vegetable section of the grocer, or at farmers markets. Fresh baby corn can also be purchased directly from farmers markets, farm stands, or Community Supported Agriculture (CSA) shares. 

Preservation: Baby corn is often imported in cans or jars, preserved in water with citric or lactic acids, as well as salt and sometimes sugar. 

Shelf life: Baby corn has a short shelf life and can't be shipped fresh.
